The Solento Process

We won't deny that we look damn good on a shelf, however, it's really what's inside our beautiful bottle that is our best kept secret. Certified Organic, easy to drink, 100% blue weber agave made in Jalisco by a single estate — it really doesn't get any better than that. Read on to find out our detailed process and how we ensure the best process for you (and for the planet).


Solento Organic Tequila Fields

Step 01: All-Natural Agave

Our organic tequila begins in the rich, nutrient-dense volcanic soils of ‘El Valle’. Our agaves are aged to at least 7 years before harvest, giving them ample time to mature, which gives our liquid unique flavor and depth.

Once ripe, the piña, or heart of the plant, is hand-harvested, carefully trimmed, and sliced in half using a traditional coa knife, preparing it for the roasting process.

Step 02: Taking It Slow

Our agave piñas are slowly roasted in a traditional stone oven for 2-3 days to enhance the flavor complexity and ensure consistency. This method allows the pure essence of the Blue Weber Agave to shine, free from any additives.

Step 03: Easy Extraction

After roasting, the agave piñas are crushed using large rollers to separate the fibers and extract the juice, which is essential for fermentation. This step blends time-honored techniques with modern technology for an ideal extraction process.


Step 04: Traditional Methods

Next, the juice from the agave undergoes natural open-air fermentation with wild yeast for 2-3 days. This process allows the wild yeast to introduce unique, rich flavors, giving the organic tequila its signature profile.

Following fermentation, the organic tequila is distilled twice in stainless steel stills, featuring copper coils, to ensure purity. It is then rested for two months, allowing the tequila to naturally aerate, resulting in a smoother, more refined flavor before aging.


Step 05: Pure Spring Water

After the second distillation, the organic tequila is blended with pure spring water sourced from deep underground. This water, rich in minerals, adds subtle natural flavors that reflect the unique landscape from which both the agave and water are drawn.

Step 06: Finishing Touches

At this point, our Blanco is complete. Translated from Spanish, blanco means “white,” which describes its clear and colorless appearance. Our Blanco is effortlessly smooth with subtle notes of citrus and vanilla that leave you savoring each sip.

For our Reposado and Añejo expressions, they now age in American Oak Whiskey barrels, imparting rich flavors of vanilla, caramel, and spice. This traditional aging process creates a tequila without any additives, where the oak’s flavor beautifully complements the agave’s natural character.
